It’s still so darn hot out, but after a long day’s work I often want something really savory and delicious. But not bad for me. Or just a little bad for me.
If I’ve thought ahead, I’ve made the incredibly easy dressing in the morning so it can blend. Then when I get home from work and the dog is jumping on me and the cat’s yowling like she hasn’t been fed in a month, and I’m so hungry I’m thinking of chewing on a stick of butter … 5 minutes to dinner.
Broccoli Bacon Salad
Dressing
½ cup mayo
1/3 cup sugar
3 TBS white wine vinegar
Salad
1 large bunch broccoli
1 small onion
8 to 10 slices of bacon, crumbled
¼ cup sunflower seeds
Mix dressing ingredients and set aside. Then cut broccoli into florets, chop onion finely, and mix with the sunflower seeds. Toss with dressing, sprinkle salt and pepper, and serve. Some people like to add a ½ cup raisins or dried cranberries.
